So far I have a few favorite knives but I'm sure it will change very soon:
For debarking - I use either a survival knife or a machete but for this my fave is the survival knife. Face carving and pretty much everything else - my trusty old utility knife.
Like I said though, I'm sure this will change when I get my home made knives sharpened and get the one I ordered.
Life is too short, carve everything you can!
